Production of Lipases by Micro Organisms
Lipases hydrolyse fats (triglycerides) into diglycerides, monoglycerides, fatty acids and glycerol. They are used primarily in medicines as digestive enzymes to supplement pancreatic lipases. Lipases are produced and secreted out by many fungi and bacteria such as Penicillium, chrysogenum, Pseudomonas fragi, Rhizopus delamar, Aspergillus niger, Mucor sp., Staphylococcus aureus, etc.
